County Fair “Grand Champion” Peach Jelly Recipe
I have to giggle a bit at the title of this blog post, but it was too good to pass up. In truth, I’m no great homesteader. To be honest, I usually have no idea what I’m doing. And for the record, I live in a fairly small county. But… that didn’t keep me from reminding my husband daily (or possibly hourly) that he was married to a “Grand Champion” after I won the ribbon for best jelly at the local county fair! All I had to do was glance in his direction and smile and he would look at me and sigh, “yes… you are a Grand Champion… I…

Recipe: It’s (Almost Better Than) Parmesan Chicken!
Welcome!! If you’ve landed on this page, you probably already know that I’m no great chef, closet connoisseur, or foodie. I’m just a wife and mom trying to find easy and delicious dishes to serve my family! Growing up, my mom was amazing in the kitchen! I remember how she could take one look in the pantry and fridge and no matter how bare it appeared, she could whip up something homestyle and delicious! I have always admired that about her. Me, on the other hand, I’ve always been a get out the measuring cups and spoons and do not deviate from the recipe type of cook. That is until…

Recipe: Rotisserie Chicken – Quick & Delicious Chicken Tortilla Soup!
I’m a stay-at-home mama and wife and that usually means that I’m brainstorming what kind of dinner I need to start prepping by mid-day. I did use the word “brainstorming” right? Because the actual “prepping” part sometimes eludes me until around 4pm when I have that “oh shoot, what’s for dinner?” moment. And lately, I’ve been there more times than I’d like to admit. A quick stop by the grocery store for a rotisserie chicken and a few other ingredients later and voila! …problem solved. A restaurant-worthy presentation of an absolutely delicious chicken tortilla soup that the entire family loves – made in less than 20 minutes! Here’s how we…

Recipe: Colorado Big Game Meatballs (w/pasta)
When my husband started hunting deer and elk a few years ago, I had no clue how to cook it. Like zero, zilch, not a clue. The first year we had our meat processed, we requested far too many cuts and I was completely lost in kitchen. The next year, we got a bit smarter (for our preferences) and requested to have most of it processed as ground meat. Over time, I have come to enjoy our little kitchen experiments where we test out this and that to see what we can make. If it’s my husband doing the experimenting, it’s almost guaranteed to be a win! (Love you, hubby!)…

This is a favorite in our house and I’ve even made it for family members that don’t share my undying love of Mexican food (it’s truly hard to imagine that we are related) and they loved it too! Suffice it to say, when your three-year-old loves it, and your in-laws love it, it’s a keeper! So, here’s our favorite recipe for ground turkey enchiladas! Hope you enjoy! Tip: Don’t forget to pair it with Nana’s Simple Homemade Tortilla Chips and Papa’s Guacamole recipe, found directly below the enchilada recipe on this page! Recipe: Grandma Millie’s Bao (Chinese Steamed Meat Buns)
I share this recipe in loving memory of a beautiful woman who selflessly cared for and nurtured all those around her. Her bao recipe, or Chinese steamed meat buns, was special to all of her boys, but especially my husband. Anytime she asked what he would like for his birthday, the answer was always the same… bao. And she would laugh, roll her eyes, and mumble about how long it takes to make. But she would glow too. I can see her face now, as I share this. You see, Millie spoke love through her cooking and her boys lived for her meals. Their bond was so much deeper than…
